Paleo Pizza

After a lot of searching for Paleo pizza recipes, I finally found a combination of crust/sauce/toppings that I wanted to try out.  I saw various recipes that used a Meatza crust, but I decided to go with a cauliflower and almond meal based crust.  The flavor turned out really nice with some nuttiness from the almond.  However, I do want to purchase a pizza stone for the next time I make this crust.  The cookie sheet gave the crust perfectly crisp edges, but the middle was a little too soft to pick up a whole slice with your hands (or maybe this was because of all the toppings we added!).  Despite having to eat it with a fork and knife, the toppings all added great flavor to the pizza..The homemade sauce was nice and fresh, the ground beef was a good choice for meat, and the pesto I made may actually be my new favorite pesto recipe.  I also had a leftover leak and some olives to use up which ended up adding some great flavor as well, plus additional color to the pizza.  The one other comment I have to make is that this was my first time using 100% grass-fed ground beef.  Maybe it was just the package I got from Trader Joe's, but I did notice that the beef was a little tougher to break up than other ground meats.  Overall, the pizza tasted great and it will definitely be made in my house again!

We also enjoyed this pizza with a glass of wine from The Clif Family Winery called The Climber.  I bought this partially for the bottle (since Dan and I both climb) and because it looked like a really interesting blend.  It's a nice smooth blend of 5 different reds..so not only is it an awesome bottle, it tastes great as well!  The red wine went well with the pizza too.  :)





Cauliflower Pizza Crust
Adapted from Food Loves Writing

Ingredients
2.5 cups cauliflower crumbles
1/4 onion, chopped
3 cloves garlic. chopped
1 cup almond meal
2 eggs
Pepper
Coconut oil, for greasing cookie sheet

Directions
1) Preheat the oven to 450° F.

2) Combine the cauliflower, onion, and garlic in a food processor and pulse until crumbly.

3) Stir the cauliflower mixture together in a bowl with the almond meal, eggs, and some pepper.

4) Grease a cookie sheet with coconut oil and form the pizza crust (I shaped mine into an oval).

5) Place the crust in the oven for 20 minutes, or until the edges turn golden brown.

6) While the crust is baking, proceed with the following recipes for pizza sauce, ground beef topping, and pesto sauce.

7) When the crust has finished baking, remove from the oven and top with desired amount of pizza sauce, ground beef, and other other additional vegetables (I also added sauteed leaks and chopped olives to mine).

8) Return the pizza to the oven for an additional 10 minutes.

9) Remove from the oven and drizzle with desired amount of pesto sauce.


Paleo Pizza Sauce
Adapted from Budget Paleo...Made Easy

Ingredients
8 oz diced tomatoes
6 oz can tomato paste
2 tsp dried minced onion
1 tsp dried basil
3/4 tsp dried oregano
1/4 tsp garlic powder

Directions
1) Combine all ingredients in a small sauce pot.

2) Simmer on low heat while crust is being made.


Ground Beef Pizza Topping
Adapted from Hungry Fitness

Ingredients
1 lb 100% grass-fed ground beef (I found this at Trader Joe's)
1/2 onion, chopped
2 cloves garlic, minced
1 T coconut oil
Pepper

Directions
1) Heat coconut oil in a pan over medium heat.

2) Saute onion and garlic until onion turns translucent.

3) Add the ground beef and season with desired amount of pepper.

4) Continue cooking until beef is cooked through and no longer pink.


Pesto Sauce
Adapted from Hungry Fitness

Ingredients
1/3 cup chopped walnuts
1/2 cup extra virgin olive oil
4 cloves garlic
2 cups fresh basil leaves
1/2 cup fresh parsley leaves
1/2 T coconut oil

Directions
1) Heat coconut oil in a small pan over medium heat.

2) Saute walnuts and garlic for about 5 minutes, until slightly browning.

3) Place all ingredients in a food processor and blend until smooth.
