Whole 30 Day 1 & Zucchini Pasta with Meat Sauce

Well, I'm partway into day 2 of the Whole 30 and things are going well!  To get prepared for this month, I cleared out my pantry and refrigerator to store away any of the food items that are not allowed for these 30 days.  For my pantry, this was mostly various rices and condiments that aren't approved.  I  ended up taking 4 large bags to store in our basement for now!  I also went on a couple grocery shopping trips yesterday to get stocked up with meats, vegetables, fruits, and healthy fats.  On the Whole 30, these are pretty much the staple foods in your diet.

To sum up my shopping, and the best places to get certain items:



Mom's Organic Market: I finally found buttercup squash again!  They also had pasture-fed ground beef in their frozen section, which I have been unable to find anywhere else.  Mom's can be a bit pricey with a lot of their items, but their produce section is excellent.  I also got some organic unsweetened coconut flakes here which make a great snack if you want something that tastes a little sweet but still has no sugar!

Giant: At least this week, Giant had some great sales on avocados, strawberries, and kiwi so I stocked up on these items there.

Trader Joe's: From my experience so far, Trader Joe's definitely has the best option for canned coconut milk.  It has nothing added to it and is only $.99 per can, in comparison to $2.49-$3.49 at other grocery stores.  I also usually get my eggs from here, Organic Omega-3 enriched, and organic chicken.  They also have 100% grass-fed ground beef and a nice produce section as well.  For convenience, they have pre-steamed beets that you can find by their lettuces/salad section of the produce area.  This is also my favorite place to get nuts.  They have a huge selection and lots of raw, unsalted nuts as well.

Wegmans: I picked up some of their wild-caught frozen Alaskan salmon (which I cooked for breakfast this morning) and it was delicious!  I also love Wegmans produce and organic food sections.

BRUNCH

Fried egg
Half an avocado
Half a pear
Half an orange
Black coffee

SNACKS

Raw cashews
Unsweetened coconut flakes
Turkey rolls with avocado slices
Organic pumpkin puree

DINNER

Sauteed spinach
Zucchini "pasta"
Ground Beef Pasta Sauce
Strawberries

Zucchini Pasta with Meat Sauce
Yield: 2 large servings of zucchini pasta, A LOT of sauce



Ingredients

2 zucchini
2 cloves garlic, minced
1/2 onion, diced
1 lb 100% Grass-fed ground beef
2.5-3 cups organic diced tomatoes (The only ingredients on the can should be tomatoes!)
2 Tablespoons organic tomato pastes (Again, only ingredient should be tomatoes!)
Basil, to taste (About 4 teaspoons)
Red Pepper flakes, to taste (About 1-2 teaspoons)
Coconut oil
1 Bag Spinach

Directions

1) Begin by preparing the sauce.  Heat coconut oil in a large saute pan over medium heat.

2) Add your diced onions and cook until soft.

3) Add the ground beef and cook until no longer pink.

4) Add the diced tomatoes, tomato paste, basil, and red pepper flakes and stir everything together.  Reduce heat and allow to simmer for about 15 minutes while you prepare the zucchini pasta.

5) Using a mandolin slicer (A vegetable slicer works as well, it's just a little more difficult and you will get thicker pieces of pasta), slice your zucchini into small pasta-like noodles.

6) Heat coconut oil in a new saute pan over medium heat.

7) Add the garlic and saute for about one minute until fragrant.

8) Add in the zucchini noodles and saute until noodles become slightly soft (Took about 5 minutes for me).

9) Remove the zucchini noodles from the pan, add a little more coconut oil and your bag of spinach.  Cook the spinach until soft.

10) To serve, plate the spinach and zucchini and add a generous portion of sauce to your zucchini!
