Whole30 Day 18 & Cashew-Coconut Crusted Mahi Mahi with Orange Banana Salsa
When I came across a recipe for coconut-cashew crusted mahi mahi with an orange-banana salsa it was way too intriguing not to try. To my (somewhat) surprise, orange-banana salsa is soooo good!!! I had eaten mango salsa before, but using bananas in a salsa made me somewhat skeptical at the start. However, all the flavors went together perfectly and the simplicity of it all seemed to make it even more enjoyable as well. Definitely try out this Whole30 recipe!
BREAKFAST
Scrambled eggs
Carrots/celery with almond butter
Black coffee
LUNCH
Beef enchilada cabbage rolls
Coconut cauliflower rice
Kiwi

1 steamed chicken tender
2 hard boiled egg whites

Cashew-Coconut Crusted Mahi Mahi with Orange Banana Salsa

Yield: 2 servings
ORANGE BANANA SALSA
Ingredients
1 orange, roughly chopped
1 medium banana, sliced
1/4 cup red onion, finely chopped
1 poblano pepper, roasted, seeded, and diced
1/4 cup cilantro, chopped
Directions
1) Mix all ingredients in a bowl and cover with plastic wrap while you prepare and cook the fish.
CASHEW-CRUSTED MAHI MAHI
Ingredients
2 Mahi Mahi filets (I bought frozen filets from Trader Joe's)
Black pepper, to taste
1/4 cup cashews, finely chopped
1/4 cup desiccated or shredded coconut
Directions
1) Preheat your oven to 400°F.
2) To finely chop your cashews, it will be easiest to use a food processor, just make sure not to blend them too much. You still want pieces of cashew, not flour.
3) Mix the coconut and cashew in a small bowl.
4) Pat your fish dry (be sure it is thawed if you bought frozen fish like I did) and place on a lightly greased baking sheet.
5) Sprinkle the fish with black pepper (and any other spice you feel like using, the original recipe used Mrs. Dash seasoning blend).
6) Top each filet with the coconut and cashew mix.
7) Place in the oven and allow to bake for 18-20 minutes or until the fish flakes easily.
8) To serve, top with the orange banana salsa.
