Whole30 day 2 - bangers and mash

Day two started out with another breakfast quiche and half an avocado with a cup of coffee. Boring and routine I know, but with work plus two a day workouts a pre-prepared breakfast is a huge help for saving time. After a morning swim I also ate one of my sweet potato and egg muffins, plus a banana, and another cup of coffee. Today was a busy day at work - we had an athlete fly in to do a top speed test on our treadmill, so a lunch was also the same as day 1. After enjoying an afternoon run, we had a healthy version of bangers and mash for dinner. According to the Whole30 guidelines, white or red potatoes aren't allowed. This is not because of any issues with them, but simply because of the psychological association many people have with these types of potatoes and french fries, potato chips, etc. The first time we did Whole30 we stuck to using sweet potatoes only, but since potato chips and french fries are not a regular part of our normal diet and we have no craving for them, we are going to use white or red potatoes on occasion for variety. If potatoes are an issue for you, this dinner can be made with a sweet potato instead.

Bangers and Mash


Ingredients
1 potato per person
1 pepper, diced
1/2 onion, sliced
0.5 - 1 T coconut oil (plus additional on the potato)
1-2 bratwursts/person, cooked and diced (Whole Foods carries a few different sausages that comply with Whole30 guidelines)

Instructions

1) Bake the potatoes - either in a microwave for ~10 minutes or until soft (be sure to poke holes in them first) or in the oven at 400 degrees for ~40 minutes. Since we were hungry after our run, we took the quick option of using the microwave

2) Cook the bratwurst according the the package instructions

3) Saute the peppers and onions in a skillet with the coconut oil 

4) Add the brats to the peppers and onions

5) Cut potato in half and add coconut oil as desired. Serve the brats and potatoes together and enjoy!


Summary Day 2: So far so good. Aside from a headache at the end of the day everything is going smoothly. My energy level is still up and down, but I know that in a week or so the combination of Whole30 foods and regular sleep will get things back on track!
