Whole30 day 10!

Finally woke up with a ton of energy! And another bonus was sleeping in and not waking up with a caffeine headache like I usually do anytime I sleep past 7 am. We have been consuming coffee in moderation, as it is allowed on the Whole30 as long as you don't go overboard. Even with the drinking coffee daily, it seems as if my body is no longer dependent upon the hit of caffeine to wake up in the morning. Another great part of day 10 was 70 degree weather in Texas. I have a love hate relationship with Dallas sometimes, as I am not much of a city girl, and the heat becomes oppressive in the summer. Right now though, this relationship is definitely in a love stage.  

Breakfast: There is nothing better than a good breakfast after sleeping in on the weekend! We had to run to the grocery store before we cooked, so we picked up some Starbucks - they have a new seasonal blend called Casi Cielo that is delicious. 

For the two of us, we scrambled up 6 eggs and cooked them in olive oil. When they were almost done, we added in a whole avocado, diced, and about half a cup of salsa. I found a great local salsa at our grocery store that is Whole30 compliant. The picture is below, along with the ingredients if you want to try and make a similar salsa yourself - with the help of a food processor homemade salsa is very easy. 















Lunch: Half a sweet potato with coconut oil and hot sauce and a salad with grilled chicken (Romaine lettuce, carrots, cucumbers) and homemade dressing.

Easy Salad Dressing


Ingredients
1/3 cup extra light olive oil
1/3 cup apple cider vinegar
2 T stoneground horseradish mustard
1 tsp salt

Instructions

Mix well, or pour into salad dressing bottle and shake!

Coconut Butter Stuffed Dates


Next up was a long ride on the bike trainer, so we needed another replacement for sports gels. This time, I decided to try taking medjool dates and stuffing them with homemade coconut butter. For the coconut butter, I took about 2 cups of coconut flakes and a teaspoon of coconut oil and blended them in the food processor until smooth. This takes about 5 minutes and requires a little bit of patience. I stopped the food processor about every minute to scrape the stuff that stuck to the side down into the center. Since the butter had to process for awhile, it gets a bit warm and is to thin to stuff the dates right away. I placed the coconut butter in the freezer for about ten minutes to set before stuffing the dates. If you don't want to do the work of making your own coconut butter, you can buy it instead. The dates need to be sliced down the center, but still connected, with the pits removed. You can fit about a teaspoon of coconut butter in each date. If you are using medjool dates, there are approximately 70 calories in each one, so combined with a teaspoon of coconut butter you get around 100 calories total, about the same as your typical sports gel. 

We got a later start than usual on the bike, so by the time I was done with the three hour workout, I was ready for food. Fortunately my awesome husband, who also did two hours of the bike workout with me, had a delicious dinner all ready when I was done!


Dinner: grass-fed beef burgers topped with carmelized onion and egg. Sides of: sweet potato and collard green hash and steamed Brussels sprouts

Burgers: grass-fed beef (93/7), salt, pepper cooked in a skillet with a small amount of olive oil
Onion: chopped and caramelized with salt and pepper in a skillet with coconut oil
Egg: Fried in coconut oil - over-easy
Sweet potato and collard green hash: shredded sweet potato and collard greens sauteed in a 50/50 mixture of olive oil and coconut oil
Brussels sprouts: Steamfresh freezer bag, a few minutes in the microwave and they are done!

Summary of day 10: Feeling great! Day 10 was filled with lots of great tasting, well-balanced food, and with the good fuel and extra energy I had a great workout as well.
