Easy Creamy Polenta and Fried Egg Breakfast

Since I still had some leftover polenta, I decided to mix up my own creamy polenta dish for breakfast.  The hot sauce definitely made this dish come together but adding just enough spice and extra flavor.


Creamy Polenta and Fried Egg

Ingredients (For one serving)
1/2 cup precooked polenta, mashed
1 Tablespoon water
1/4 cup almond milk (or other milk of choice)
1 teaspoon hot sauce
2 teaspoons oregano
1 small tomato, diced
1 egg
Olive oil

Directions
1) Place precooked polenta and water into a microwave-safe dish and heat for 20-30 seconds, until slightly soft.

2) Add the mashed polenta and almond milk to a small pan over medium-low heat.

3) Mix in oregano, hot sauce, and tomato and continue to cook for 6-7 minutes, or until heated through.

4) In a small saucepan heat a small amount of olive oil over medium-low heat, crack open the egg, and allow to pan fry until cooked through.  Flip the egg when it is mostly cooked through to finish cooking the top side.

5) Dish up the polenta and add the fried egg on top.  Top with any additional oregano or black pepper if desired.

*Note: You can cook your egg whichever way you prefer for this dish.  A poached egg would probably taste great as well, but I chose to fry mine out of convenience.
