Sweet Potato, Hummus, and Kale Stuffed Chicken Breast
I came up with this dinner idea while trying to find a way to use up some kale and sweet potatoes, and incorporate the batch of hummus I had made from a couple days prior. The end result was delicious and the recipe can easily be altered to incorporate any flavors you would like!
Ingredients:
-1c hummus (I used my own recipe which is posted, you could also use storebought)
-1 sweet potato
-2 cups kale
-2 chicken breasts
-1/4 cup mozzarella cheese
-gluten free breadcrumbs (I used Glutino brand)
-1 egg
Instructions:
1) Preheat oven to 350 degrees
2) Clean sweet potato well, pierce 8-10 times with a fork, and microwave for ~6 minutes to soften
3) Place the hummus, 1/2 of the sweet potato (I used the other half to make sweet potato fries!), and 1c of the kale in a food processor and pulse until smooth
4) Place each chicken breast in an airtight ziplock bag and pound until ~1/2" thick
5) Place the egg in a bowl and beat well
6) Remove chicken breasts from the plastic bags and coat with egg
7) Dredge the chicken breasts in the breadcrumbs until evenly coated
8) Place 1/2 of the hummus mixture on each chicken breast
9) Chop the remaining 1c of kale and add half to each chicken breast
10) Sprinkle mozzarella cheese on each chicken breast before wrapping
11) Pick up the ends of the chicken breast and pull them together to meet in the middle; secure with toothpicks to ensure they don't fall apart in the oven
12) Lightly grease a large baking dish and place the chicken breasts in the dish
13) Bake for ~45 minutes or until the juices from the chicken are clear
