Hummus, Guac, Salsa, and Queso

After realizing how fast my fiance and I were going through store bought dips (i.e. hummus, salsa, etc.) whenever they were in the house, I decided to start making them myself instead. I can make all 4 in about 30 minutes and then use them throughout the week for snacks/appetizers and incorporate them into meals. Not only is this significantly cheaper, but tastes much better too! Plus you can adjust the flavors/seasonings however you would like - all you need is a food processor.

Salsa (16oz) = $3.99 ($0.25/oz)
Hummus (16oz) = $3-5 ($0.19-$0.31/oz)
Fresh Guacamole (16oz) = $7-10 ($0.44-$0.63/oz)

Homemade:
Salsa (~60oz) = $3.75 ($0.06/oz)
Hummus (32oz) = $2.00 ($0.03/oz)
Guacamole (~50oz) = $5.75 ($0.12/oz)

Recipes:

Salsa - Ingredients

-1 can of diced tomatoes with green chiles
-1 can of corn
-1 can of black beans (drained and rinsed)
-1 jalapeno
-1/2 of an onion (can use either red or yellow)
-~1c fresh cilantro (more or less to suit your taste preferences, I love cilantro)
-1 lime
-salt to taste

Instructions:
1) Place jalapeno, onion and cilantro in food processor and process until well minced
2) Add in the juice of the lime, desired amount of salt (I only add ~1/2 tsp), and the diced tomatoes. Pulse briefly until well mixed
3) Add in the corn and black beans. Quickly pulse just enough to mix in the beans and corn.

Queso: After making the large batch of salsa, making queso is easy!

Ingredients

-~ 1c of homemade salsa from above
-1/2'' slice of 2% velveeta cheese
-4T milk (can use dairy or coconut milk)

Instructions:
1) Heat velveeta and milk in microwave until melted
2) Stir the velveeta and milk until it is well mixed (you can either add more milk or more cheese here to achieve desired consistency)
3) place 1c of the salsa from the recipe above into the cheese mixture and stir together


Hummus (chili pepper flavor) - Ingredients

2-15 oz cans of chick peas (Drained, but reserve the juice)
1 lemon (or you can use bottled lemon juice)
1tsp cumin
1/2 tsp garlic powder
1tsp salt
1tsp black pepper
2 tsp chili powder (adjust to taste)
3-5 dashes hot sauce (more or less depending on how much spice you like)
1T sesame seeds - optional

Instructions:

1) Place the drained chick peas in the food processor along with the juice of one lemon (Or ~1/4 cup if using bottled). Process for ~30 seconds.
2) Check the consistency of the processed chick peas. Add reserved juice from the chick pea cans 1T at a time until attaining desired smooth consistency (The mixture should be smooth, but still thick)
3) Add cumin, garlic powder, salt, black pepper, chili powder, hot sauce, and sesame seeds (optional) and pulse to mix thoroughly.
4) Taste and adjust spices to suit your preferences

*** Can use this same basic recipe and use difference spices to make any flavor of hummus you want***

Guacamole - Ingredients

3 large, ripe avocados
2 medium sized roma tomatoes
2 cloves garlic
1 lime (or you can use ~1/4 cup bottled lime juice)
1/3 of a medium sized red onion
1c fresh cilantro
salt to taste
1 tsp chili powder (optional)
*Can also add a squeeze of lemon juice to prevent the avocados from browning if not consuming immediately

Instructions:

1) Process the red onion, cilantro and garlic in the food processor until fine.
2) Add juice of 1 lime, salt, chili powder (optional) and tomato and pulse until tomato is diced
3) Add avocados and pulse until desired consistency is reached (I like to pulse less for a chunky avocado consistency).
