Sun-Dried Tomato & Avocado Stuffed Burger

Just like my jalapeno chicken burgers, these burgers require very few ingredients but are definitely not lacking in flavor!  The stuffing is so delicious that we had to add extra on top before serving the burgers!  You could use any kind of ground meat for these as well.  The original recipe calls for ground beef, but ground turkey or chicken would work just as well.

Sun-Dried Tomato & Avocado Stuffed Burgers
Yield: 4 burgers
Ingredients
1 pound ground meat
1 avocado
1/2 cup sun-dried tomatoes
Juice 1/2 lemon
Zest 1 lemon
Black pepper

Directions

1) Preheat your grill to medium high heat.

2) In a small bowl, mash the avocado and mix in the sun-dried tomatoes, lemon juice, and black pepper (to your desired taste).

3) In a large bowl, mix together the ground meat, lemon zest, and black pepper (add enough to your liking).

4) Now it's time to form your burgers!  The easiest way is to first create 8 thin patties (you will be combining 2 of them to form 1 stuffed burger).  Next, add some of the avocado mixture to 4 of the thin patties.  Make sure you add enough, but not too much.  You need to able to seal the top patty all the way around.  After 4 of your patties have the avocado stuffing ready, top each of these with a second patty and use your fingers to seal the patty all the way around, so the stuffing stays in the middle!

5) Go outside and get to grilling!  If you use beef, cook the burgers to your liking.  If you use chicken or turkey, make sure they are fully cooked before serving (about 6-8 minutes per side).

6) To serve, top with any extra avocado mixture.  Dan and I also split a Quick Paleo Bun and served it as an open-faced burger.  It did require a fork and knife, but was really tasty!
