Buffalo Chicken Sandwiches (Yes, it is all Paleo!)
If you’ve ever been to Buffalo, NY, I really hope you’ve had some of their true Buffalo wings. The two big wing joints are Anchor Bar and
Duff’s. I have only had the opportunity
to try Buffalo wings from Duff’s, but they were by far the best wings I have
ever had. Tonight, I was craving that
tangy Buffalo sauce flavor so I decided to give it a shot with a Paleo version
of the sauce. It was super easy and
tasted just like Buffalo sauce!!! (Not to mention it is much healthier for you
because I substituted the insane amount of butter with a smaller amount of
coconut oil).
I served this sauce as Buffalo chicken sandwiches with my
new go-to recipe for Paleo buns (see below) that you cook in the microwave:

When I made this sauce, it was enough for 2 small chicken
breasts. If you follow the steps for the
Buffalo chicken below, just remember to adjust the amount of sauce depending on
the amount of chicken you will be using.
Yield: 2 servings
Ingredients
2 T coconut oil
2 T coconut oil
2 T hot sauce (I used Trader Joe’s brand, if you want it to
be more “authentic” try out Frank’s)
1 clove garlic
½ teaspoon paprika
1 ½ teaspoons apple cider vinegar
Directions
1) Melt coconut oil over low heat in a small saucepan.
2) Add the remaining ingredients for the sauce and mix well.
3) Cook for 2-3 more minutes, then remove from stove and
serve!
*If making Buffalo chicken, continue following the remaining
steps below:
4) Mix half of the sauce with 2 small chicken breasts
(trimmed of any excess fat and pounded to ¼ inch thin).
5) Cook chicken using desired method. I pan fried the breasts for about 8 minutes
per side, grilling would be delicious though as well!
6) When chicken is fully cook, plate and spoon the remaining
sauce on top.
Yield: 1 bun

Ingredients
¼ cup almond flour
2 Tablespoons flax meal
½ teaspoon baking powder
Pinch of salt
1 egg
1 ½ teaspoons coconut oil
*Baking powder is not actually considered to be paleo (but I
use it occasionally anyway because it is such a small amount). If you want to make these 100% paleo, this
website lists several substitutes for baking powder. The most common is the combination of baking
soda + cream of tartar.

Directions
1) Mix all dry ingredients in a small bowl.
2) Melt the coconut oil, then whisk with the egg.
3) Add the wet ingredients to the bowl of dry ingredients
and mix well.
4) Pour mixture into a greased ramekin and microwave for 1
minute.
*Many different dishes (as long as they are microwavable!)
will work for these buns. Simply choose
a circular dish (or different shape if you want to get creative) that is the
size you would like your buns to be, such as a small Pyrex dish or a large mug.
