Garlic Infused Coconut Flour Pizza with Sage Mashed Sweet Potatoes & Balsamic Onions

This pizza turned out to be the delicious result of my attempt to use up food I had in my fridge/freezer without going to the grocery store.  Turns out that I had all the perfect ingredients to create a very unique Paleo pizza!  The garlic, sage, and balsamic molded together and complemented each other better than I anticipated; I may try this flavor combination in another dish as well!

The coconut flour crust, which I did follow a recipe for, was awesome too.  It held together like actual pizza crust and the garlic infusion gave it a very nice taste as well.  If you've read some of my earlier posts, you may have seen the cauliflower crust pizza that I made a while ago.  To compare the two, this one was much better (and easier!).  Although the cauliflower crust tasted good, it did not hold together and made the pizza more of a fork-and-knife food than finger food.  The coconut flour crust on the other hand wasn't messy at all because it held all the toppings and didn't break!  

Garlic Infused Coconut Flour Pizza with Sage Mashed Sweet Potatoes & Balsamic Onions
Yield: 2 personal pizzas

There are several components to this pizza.  Here is the order/timing I would suggest for cooking:

0:00               Place your sweet potatoes in the oven to roast (Take about 45 minutes total).
15:00             After 15 minutes, place your cabbage and zucchini in the oven (Take about 30 minutes total).
35:00             Begin to prepare the crust about 10 minutes prior to your vegetables being finished.
45:00             Remove sweet potatoes, cabbage, and zucchini from the oven.  Reduce heat to 375°F, then place your crusts in the oven.
45:00-65:00  While the crusts bake, cook the balsamic onions and prepare the mashed sweet potatoes.  Your onions can be left over low heat until the crusts are finished baking.
65:00-70:00  Remove your crusts from the oven.
70:00            Add all the toppings to the pizza and increase heat to 425°F.  Place the pizzas in the oven for 10-15 minutes.

Sage Mashed Sweet Potatoes

Ingredients
2 sweet potatoes
4 T coconut milk
2 tsp dried sage

Directions
1) Preheat oven to 400°F.
2) Scrub your sweet potatoes.
3) Place sweet potatoes on a small baking sheet lined with parchment paper or aluminum foil.
4) Bake for 45 minutes, or until soft.

Roasted Cabbage and Zucchini

Ingredients
1 cup cabbage, roughly chopped
1 small zucchini, sliced then cut into quarters
1 T coconut oil, melted
Pepper, to taste

Directions
1) Preheat oven to 400°F.
2) Mix cabbage, zucchini, pepper and coconut oil.
3) Place in a pyrex baking dish.
4) Bake for 15 minutes, stir, then bake for 15 more minutes (30 minutes total).

Balsamic Onions

Ingredients
1/4 large yellow onion, thinly sliced
1.5 T balsamic vinegar
1 tsp dried oregano
Olive oil, for frying

Directions
1) Add olive oil to a small pan and turn heat to medium-low.
2) Add your sliced onions and oregano and reduce heat to low.
3) Cook for about 5 minutes, stirring occasionally.
4) Add the balsamic vinegar and cook, stirring occasionally, for about 10 minutes or until most of the vinegar has evaporated.

Garlic Infused Coconut Flour Crust

Ingredients
3 eggs
1 cup coconut milk
1 clove crushed garlic
1 tsp garlic powder
1/2 cup coconut flour
1/2 tsp baking powder
1/2 tsp salt

Directions
1) Preheat oven to 375°F.
2) Prep a baking sheet by lining with parchment paper and brushing the paper with olive oil.
3) Lightly beat eggs, milk, crushed garlic, and garlic powder in a bowl until smooth.
4) Sift remaining ingredients together in a large bowl.
5) Pour wet ingredients in with the dry and whisk until well combined.
6) Separate the batter in half to form two pizza crusts by spreading evenly on your prepared pan.
7) Bake for 22-25 minutes or until golden brown.
8) Remove from oven and carefully flip (You can do this by placing a different baking sheet on top of it and flipping.
9) Peel the parchment paper off of the crusts.

Assembling the Pizzas

1) Preheat oven to 425°F.
2) Spread each pizza evenly with the sage mashed sweet potato mixture.
3) Add desired amount of remaining toppings (roasted zucchini and cabbage, balsamic onions).  For my pizzas, I also added pan fried scallops, which were delicious!  Feel free to get creative :)
4) Place the assembled pizzas in the oven for about 10-15 minutes.
5) Enjoy!
