Bacon Wrapped Buffalo Chicken Tenders with Chinese 5-Spice Roasted Sweet Potatoes
If you love bacon and you love buffalo sauce, then you NEED to make these chicken tenders! Just think about that tangy and spicy buffalo sauce, crispy bacon, and tender baked chicken - all in one flavorful bite. I bet you're already thinking about making these for dinner tonight. :)
I served the chicken tenders with Chinese 5-spice roasted sweet potatoes (I had just bought some of this spice and wanted to give it a try, turned out great!) and some peas and onions sauteed in coconut oil. Everything went together very nicely.
Yield: ~3 servings
8 boneless, skinless chicken tenders
4 slices bacon
1 serving Paleo Buffalo Sauce
Directions
1) Preheat the oven to 450°F.
2) Cut the bacon slices in half lengthwise, so you have 8 thin slices total.
2) Wrap one thin slice of bacon around each chicken tender. Be sure to wrap it tightly so it will stay together when it bakes.
3) Line a baking sheet with parchment paper and lightly spray with olive oil.
4) Place bacon-wrapped tenders on the baking sheet. Drizzle with about 1/2 Tablespoon of buffalo sauce (or a bit more if you want it spicier).
5) Place tenders in the oven and bake for 10 minutes. Remove from the oven, flip, and drizzle the other side with about 1/2 Tablespoon more of the buffalo sauce. Return to the oven and continue to bake for another 10 minutes, or until the bacon is crispy and the chicken is baked through.
6) To serve, top with additional buffalo sauce if desired. We prepared ours with just the 1 Tablespoon of buffalo sauce for baking and they were still very flavorful with a nice level of heat.
Yield: ~3-4 servings as a side dish
Ingredients
2 large sweet potatoes
1 Tablespoon coconut oil
3/4 teaspoon Chinese 5-spice powder
Directions
1) Preheat oven to 400°F.
2) Line a baking sheet with parchment paper or aluminum foil.
3) Scrub sweet potatoes and cut into ~1 inch cubes.
4) In a large bowl, mix sweet potatoes, coconut oil, and Chinese 5-spice. Stir around a bit so that the sweet potatoes are relatively evenly coated.
5) Place sweet potatoes on the prepared baking sheet and place in the oven for 20 minutes, flip, then return to the oven for another 15-20 minutes, or until soft.
