Peach-Strawberry Guacamole with Spicy Sweet Potato Chips
This recipe is a great appetizer, and very unique in my
mind! I have made grilled pineapple
guacamole before (also delicious, and in my blog as well), but had never heard
of peaches and strawberries being put in guacamole. The sweetness of the guacamole went perfect
with the spiciness of the sweet potato chips I served it with. Feel free to adjust the amount of mix-ins for
the guacamole to your own preference.
Yield: ~2 servings
Ingredients
2 medium sweet potatoes, washed/scrubbed
2 medium sweet potatoes, washed/scrubbed
1 T coconut oil, melted
½ teaspoon salt
*½ teaspoon cayenne pepper
Directions
1) Preheat the oven to 400 deg F.
2) Slice the sweet potatoes into ~1/8 inch slices. My food processor has a special slicing
blade, which worked perfectly for these.
You can also use a mandolin slicer to get relatively even, thin
slices. If you don’t have either of
those options, it is still doable by hand, but you will want to keep a closer
eye on the chips while they are baking because it is more difficult to cut even
slices yourself.
3) Place the sliced sweet potatoes in a large bowl and mix
well with the coconut oil, salt, and cayenne pepper.
4) Place sweet potatoes on two baking sheets lined with
parchment paper.
5) Place in the oven for 10 minutes, flip once, and then
return to the oven for 10-12 more minutes (20-22 minutes total), or until crisp
(but not burned!).
*These chips were relatively spicy, so if you don’t enjoy
spicy foods reduce the cayenne to ¼ teaspoon, or substitute with ground pepper
to remove the spiciness entirely. These
chips were pretty spicy eaten plain, but this spiciness was perfectly
complemented by the sweet guacamole so I’d definitely recommend serving the two
together!
Yield: ~3 cups or so (this is a very rough estimate!)

Ingredients
2 avocados
½ large tomato, diced
1 ½ peaches, diced
½ cup strawberries, diced
1 lemon, juiced
1 T fresh basil, chopped
Directions
1) Mash the avocados together in a medium bowl.
2) Add the diced tomatoes, strawberries, and peaches.
3) Pour in the lemon juice and add the fresh basil. Mix well.
4) Garnish with some more diced strawberries and serve with
your favorite chips! This sweet guac
tasted great with the spicy sweet potato chips.
The spiciness of the chips is nicely offset by the sweetness of the
guacamole.
