Grilled Avocado with Spicy Salsa

I know I have a very old post on an avocado obsession of mine.  Well, I still love this amazing fruit (Yes, it is actually a fruit!).  I have made avocado pasta sauces, several different versions of guacamole, avocado ice cream, baked avocados, avocado pesto...and the list goes on and on.  However, this was our first time experimenting with grilled avocado.  And guess what - It's just as amazing as every other way to prepare avocados (If not even more amazing!).  Next time you decide to heat the grill up for dinner, through an avocado on there as well!  The spicy salsa we stuffed these with was delicious as well and super easy to throw together.


Grilled Avocado with Spicy Salsa
Yield: 2 servings (as a side)

Ingredients
For grilled avocado
1 avocado, sliced in half lengthwise
Juice 1/2 lime
1-2 teaspoons olive oil

For Spicy Salsa
Juice 1/2 lime
1.5 teaspoons olive oil
1.5 Tablespoons cilantro, chopped
1.5 teaspoons hot sauce
1/4 cup diced red onion
1 small tomato, seeds removed and diced
1/2 jalapeno, finely diced
1/2 red chile pepper, finely diced
Pepper, to taste

Directions

1) Preheat your grill to medium-high heat.

2) Prepare your avocados by squeezing the juice from 1/2 lime onto both halves and then brushing each half with the olive oil.

3) Prepare your salsa by mixing together all of the salsa ingredients in a medium-sized bowl.

4) Take your avocados out to the grill and place on the grill flesh side down.  These only take a few minutes.  They should be done once they have some nice grill marks.

5) Remove the avocados from the grill and stuff with the prepared spicy salsa.  The salsa is really tasty, so go ahead and overfill the avocados with as much salsa as you want!
