Pina Colada-Strawberry Swirl Smoothie
Pina colada has been one of my favorite flavors for years: If there was ever a pina colada option, I always chose to take it. Since the weather has been getting hotter, a pina colada smoothie sounded like a great after-dinner treat! The strawberry swirl mixed in here not only looked cool, but tasted great with the pina colada smoothie as well.
Yield: 2 smoothies
IngredientsFor Strawberry Swirl
2/3 cup frozen (or fresh) strawberries
Splash coconut water
For Pina Colada Smoothie
1 frozen banana
8 oz can pineapple chunks, with juice
2 Tablespoons coconut water
1/4 cup lite coconut milk
1 cup ice
Directions
For Strawberry Swirl
1) Place strawberries in a blender and blend until smooth. Add coconut water as needed to get a nice puree. *Note: If using fresh strawberries, the coconut water may not be necessary.
2) Divide strawberry mixture evenly between 2 glasses (Just pour into the bottom of the glass, the swirling will come later!)
For Pina Colada Smoothie
1) Place frozen banana, whole can of pineapple chunks (including the juice), coconut water, lite coconut milk, and ice into a blender and blend until smooth.
2) Slowly divide the pina colada mixture between each glass. Pour into the middle of the strawberry mixture, and as the glass gets more full, the two components will begin to swirl themselves. To help the swirling, you can gentle swirl the glass with your hand as well (just be careful not to let it spill over the top!).
