Tex Mex Pork Chops with Simple Paleo Coleslaw
I will definitely be making these pork chops again in the
future: They were super flavorful, despite not having an insane list of
ingredients. If you’re trying to find a
recipe, but don’t have too many ingredients on hand then this is the recipe for
you! You could serve these with a
variety of different sides as well. I
chose to serve them with a simple coleslaw recipe I came up with a couple weeks
ago (again, minimal ingredients and super easy!). The flavors all went well together and it was
all pleasantly filling.
Yield: 2 servings

Ingredients
1 teaspoon garlic powder
1 teaspoon chili powder
½ teaspoon cumin
Dash cayenne pepper
Dash of ground black pepper
2 pork chops
¼ onion, thinly sliced
½ cup salsa
½ cup coconut milk
Directions
1) Heat a skillet over medium-low heat.
2) Sprinkle pork chops with the spice mixture and rub into
the meat with your hands. Be sure to
thoroughly coat the entire chop. I had a
small amount of extra spice rub leftover.
3) When the skillet is hot, add the coconut oil and allow to
melt for a few seconds.
4) Add the pork chops to the skillet and cook for about 4-5
minutes per side.
5) Remove the pork chops and set aside while you cook the
onions.
6) Add the onions to the skillet and cook for about 8
minutes, or until nicely soft.
7) Add the salsa and coconut milk and stir well.
8) Return the pork chops to the skillet, increase heat to
medium, and bring sauce to a simmer.
9) Once the sauce is simmering, reduce to low or medium-low
heat in order to maintain a low simmer.
Cover the skillet and allow mixture to simmer for 15 minutes.
10) Remove from heat and serve with desired sides (Simple
Coleslaw recipe is below).
Yield: ~4-5 servings
Ingredients
1 bag coleslaw mix
2 Tablespoons apple cider vinegar
2 Tablespoons olive oil
¼ teaspoon garlic powder
¼ ground mustard
Pepper, to taste
1-2 teaspoons honey, depending on desired sweetness (2
teaspoons won’t make it “sweet,” but the honey does add some nice flavor)
*Optional: ½ deseeded and diced jalapeno, ½ diced bell
pepper, 1 diced cucumber, or any other vegetables you like!
Directions
1) Mix all dressing ingredients (everything except the bag
of coleslaw and optional ingredients) in a small bowl.
2) Pour the bag of coleslaw mix, and any optional
ingredients, into a large bowl.
3) Pour the dressing in the bowl with the coleslaw and mix
well.
4) You can either serve this immediately or allow it to sit
in the fridge for an hour or so to chill and to allow the flavors to meld
together.
