Whole30 Day 24 & Spicy Toasted Sesame Chicken

You know it is going to be a good day when it starts with a 2 hour delay!  It still amazes me the amount of snow that schools in Maryland will close for in comparison to upstate New York.  Not that I'm complaining about this fact because it allowed me to get some extra sleep.  I also got to substitute for my mentor teacher from the high school today.  It was nice getting to see some of the students and other teachers there again!  After work, I went to try on bridesmaids dresses for Lindsay's wedding that's coming up in June...It was an easy decision to pick out the one I will be getting (it also happened to be the first one that I tried on).  Now I just need to order the dress and find shoes!

For the wedding, the colors will be Maize & Blue!

Raw vanilla-cinnamon blueberry cereal

LUNCH

Salad with steamed chicken
Tomato, parsnip, and carrot soup
1/2 avocado

AFTERNOON SNACK

Carrots
Dried mango
Celery
Handful cashews

Spicy toasted sesame chicken & broccoli
Sauteed cabbage with onion and garlic
Kiwi and blueberries
Tea

I decided to get creative tonight and create my own meal.  I didn't base this one off of any recipes and it came out tasting great! :)  The sauteed cabbage was simple and doesn't really need its own recipe.  All I did was heat some coconut oil over medium heat and add some chopped onions and garlic.  I cooked the onions until they had softened, then added the chopped cabbage.  The cabbage only needs a couple minutes to cook to get it slightly soft.  Simple and delicious!


Spicy Toasted Sesame Chicken & Broccoli
Yield: ~3 servings

Ingredients

1 lb chicken, cut into bite sized pieces
2 cups broccoli florets
1/2 green bell pepper, sliced
2 cloves garlic, minced
2 Tablespoons coconut aminos
1 teaspoon red pepper flakes
1 Tablespoon sesame seeds

Directions

1) Toast the sesame seeds by placing them in a small saute pan over medium-low heat until they begin to turn slightly brown.  Mine took a decent amount of time (6-8 minutes).  Just watch them carefully so they don't burn, and stir them every once in a while.

2) In a large saute pan, add some olive oil and turn heat to medium.

3) When your pan is heated, add the broccoli and pepper and saute for 2-3 minutes or until the broccoli turns bright green and begins to soften.

4) Transfer the broccoli and peppers to a plate while you cook the chicken.

5) Add a little more oil to your pan if necessary and turn the heat back to medium.

6) Add your chicken pieces, garlic, and red pepper flakes and cook 6-8 minutes or until no longer pink and cooked through.

7) Add the coconut aminos and mix with the chicken.  Also add the broccoli and peppers back to the pan and cook for about 2 more minutes to reheat the broccoli.

8) Remove from heat and mix in the toasted sesame seeds.
