Whole30 day 14
Day 14 was double run Wednesday! I made sure I was well prepared with food and pre/post run snacks and hydration to make sure I wasn't depleted going into Thursday's power test on the bike. Wednesday is also one of my longest/busiest days at work, so I needed to be prepared. On a side note, I received the one gallon container of coconut oil that I ordered from Tropical Traditions. They are having a sale that ends today - all gallon and larger containers of coconut oil 50% off. Now I won't need to buy coconut oil for a long time :)
Breakfast: Piece of quiche (shredded rutabaga, shredded sweet potato, mushroom, kale, egg), half and avocado, cup of coffee.
Pre-run #1 (mid-morning): In order to have some pre-run nutrition, I made up a recipe for energy bites on Tuesday and mixed up a batch.
1 large sweet potato
1/2 cup mixed nuts
1/2 cup raisins
3/4 cup coconut flakes
2 tsp salt
1 T cinnamon
Additional 1/4 cup coconut flakes
1 T cocoa powder
Instructions
1) Cook the sweet potato - I cooked it in the microwave for ~12 minutes, flipping halfway through (Be sure to poke holes in it before microwaving)
2) Place nuts, raisins, salt and cinnamon in food processor and blend until finely chopped.
3) Cut the sweet potato into a few pieces and add to food processor. Blend until well mixed.
4) Add the coconut flakes and mix. If needed, add more coconut flakes to make the consistency thicker - it should end up similar to dough in terms of stickiness.
5) Place in refrigerator overnight.
6) Place the additional coconut flakes and cocoa powder in a ball and mix together
7) Roll the dough into 1" balls and then roll into the coconut flake/cocoa powder mix - store in the refrigerator.
Lunch: The usual (vegetables, orange, half a grilled chicken breast, half a sweet potato with coconut oil and hot sauce).
Pre-run #2: handful of almonds and raisins.
Dinner: Bowl of Crockpot Beef Chili topped with avocado, and sweet potato hash with mushrooms and collard greens (sauteed in coconut oil).
Day 14 summary: Enjoyed both runs - had enough energy and the weather was perfect. The second run of the day was particularly enjoyable - with headlamps and under a full moon along White Rock Lake. Now to keep energy level high and well-hydrated in preparation for my bike test!
