Whole30 day 7

Day 7 and I felt like I had the energy to get out of bed in the morning, then looked out the window and wanted to crawl right back in. It was cold, raining, and gloomy all day, perfect weather for a double run day...

Pre-workout #1: cup of coffee and half an avocado

Breakfast: piece of quiche, banana, and another cup of coffee

Lunch: the usual veggies, orange, half a chicken breast, and half a sweet potato with coconut oil and hot sauce

Pre-workout #2: a cup of green tea and a handful of unsweetened banana chips

Dinner: a burger made with grass-fed beef, topped with homemade ketchup (sans sugar of course) and mustard, half an avocado, and sweet potato/rutabaga hash.


Sweet Potato & Rutabaga Hash


Ingredients
~1 cup shredded sweet potato
~1 cup shredded rutabaga
1 T olive oil or coconut oil
1 green pepper, diced
1/2 medium size yellow onion, diced
1 tsp sea salt
1 tsp paprika
1/2 tsp black pepper

Instructions

1) Saute the sweet potato, rutabaga, peppers, and onions in a skillet with olive oil over medium heat

2) Once the vegetables are cooked and the sweet potato and rutabaga begin to brown, add the spices and adjust to taste as desired.


Summary day 7: Made it through the first full week! I'm enjoying cooking and experimenting with new recipes, and am really glad to make it out of the "I just want a nap" stage!
